Honey and Wheat Potato Rolls

1 pkg. dry yeast
1 ½ c. warm water
5 to 5 ½ c. all purpose flour
2 c. whole wheat flour
2/3 c. butter softened
1 c. lukewarm mashed potatoes
2/3 c. honey
2 eggs
1 ½ tsp. salt

Dissolve yeast in warm water. Add 2 c. flour, wheat flour, butter, potatoes, honey, eggs and salt. Beat until smooth. Stir in enough of remaining flour to make dough easy to handle. Knead until smooth and elastic. Place in greased bowl, turn greased side up. Let rise until double in size. Punch down dough, shape into rolls- place on greased cookie sheet. Let rise until double. Bake at 375 degrees for 20-30 minutes. Brush tops of rolls with butter. Makes 35 rolls.
