Mom's 1-Hour Rolls

Kale Cloward

Preheat oven to 420*

Mix and set aside:
1/4 C warm water
2 T yeast
In another bowl, mix and set aside to cool:
1 C hot water
1 t salt
2 T sugar
6 T oil
Stir to mix well, the let cool to room temperature.
Then add and stir well after each item:
1 C flour
1 egg
Yeast mixture
Gradually add and mix well:
2 C flour (+/- a little to make a soft, but not sticky dough)
Finished mixture should be kneaded until sort of shiny and does not stick to countertop or hands. (I've also made these in my Kitchen Aid and just put it on low for about 6 minutes and they turn out great.)

Immediately form into rolls of desired size and place on a well-greased pan. Rise for 20-30 minutes.

Bake at 420* for 10-12 minutes.

(Note: If you make these a little more stiff and larger in size they work really well for hamburger buns or for sloppy joes. I also use them frequently as a side for soups.)
