1 Tbls. yeast
1/4 cup warm water
1/4 cup butter, softened
1/4 cup honey
1 cup boiling water
2 eggs
1 cup quick cooking oats
1 tsp. salt
3 1/2 cups flour
 In  a large mixing bowl dissolve yeast in warm water.  Combine butter,  honey and boing water; stir until butter is melted.  Cool to 110-115  degrees.  Add  eggs, oats, salt, and butter mixture to the yeast and mix  on medium speed for 2 minutes. then add flour. Stir in enough flour to  form a soft dough. Cover; let rise in a warm place until double.
Punch dough down.  Transfer to a greased cookie sheet and form a round loaf or two loaves. But do not use bread pans.
Cover and let rise until double. Bake at 375 for 35 - 40 minutes
