Moist Cornbread

½ c. butter
2/3 c. white sugar
2 eggs
1 c. buttermilk (or 1 c. milk mixed with 1 TBSP lemon juice)
½ tsp. soda
1 c. cornmeal
1 c. flour
½ tsp. salt

Melt butter, stir in sugar. Add eggs and buttermilk. Add soda and stir in rest of dry ingredients. Blend well. Pour into greased 8 X 8 square pan. Bake at 375 degrees for 30 minutes.
