2 C flour
1 egg
Pinch of salt
Milk
This  is a messy process, but worth the results.  Put flour in a medium sized  bowl.  Mix in a little salt if desired.  In a separate bowl, whisk egg  and about ¼ C of milk.  Pour egg mixture into flour and stir together.   You want the mixture to just barely stick together and be very flour-y.   You may need to add more flour or milk to get the desired results.  Use  your hands.  Separate ball of flour into two sections.  Place one  section on a flour dusted hard surface.  Roll out very thin to a  rectangle or square.  Cut long, thin strips.  These noodles will puff up  considerably when cooked, so roll and cut pretty thin.  Repeat with  second half of flour.  It makes a lot of noodles.
