This pie is SOOOOOO good! You must try it!
Ingredients:
1 uncooked single pie crust
1/2 C butter
1 C sugar
1 Tbsp flour
3 eggs
1 C buttermilk (just add about a Tbsp of lemon juice to a cup of milk for this.)
1 tsp vanilla
1. Preheat oven to 450. Prepare pastry. Line pastry with a double thickness of foil. Bake 8 minutes. Remove foil. Bake 4 to 6 minutes longer, or until pastry is light golden brown.
Reduce heat to 350.
2. In saucepan, melt butter over medium low heat. Stir in sugar and flour. Remove from heat and set aside. In mixing bowl, beat eggs with electric mixer on medium for 1 minute. Stir in buttermilk and vanilla. Gradually whisk buttermilk mixture into butter mixture until smooth. Pour into crust.
3. Place pie on oven rack, carefully tent the whole pie with foil. Bake 50 to 55 minutes or until center is set when gently shaken. (I cooked mine on a cookie sheet and just attached the foil to the cookie sheet, also avoiding spills this way.)
Cool on wire rack for 1 hour. Cover and refrigerate at least 4 hours before serving.
