I wanted to do a cutesy Easter-themed treat, and came up with this. I do think they'd be even better placed on top of a shortbread cookie (like the one from the samoa cookie recipe, since this is just the topping from those cookies). I toasted a bunch of coconut (I didn't measure, sorry) on a cookie sheet. Then I mixed up Tara's caramel recipe and mixed in the coconut until it was dense enough to mold into little nests. Then I put some Cadbury eggs on top. Quick and easy. And cute!
