2 1/2 C. flour
1 1/2 tsp. baking soda
1/2 tsp. salt
3/4 C. butter, softened
1 1/2 C. light brown sugar
2 large eggs
3 C. ripe bananas mashed (about 7 medium)
1 tsp. vanilla extract
optional: 1 C. chopped walnuts
Preheat oven to 325 degrees. Grease two 9X5 inch loaf pans. In a medium bowl combine flour, soda and salt with a wire whisk, set aside. In a large bowl cream butter and sugar with an electric mixer. Add eggs, bananas and vanilla. Beat at medium speed until thick.
Add the flour mixture and the walnuts. Blend at low speed until combined. Do not over mix. Pour batter into prepared pans. Bake for 60-70 minutes. Cool in pan for 10 minutes.
